Ingredients:
- 2 large green apples
- half large onion
- 1/2 green chilli
- 2 cloves garlic
- 1 rampe leaf
- few curry leaves
- 1 1/2 Tbsp curry powder
- pinch of red chillie powder
- knob of butter
- Tbsp vegetable oil
- Tsp raw sugar
- a dried red chilli
- few black mustard seeds
Method :
Step 1 - Dice the apples into bite size cubes or cut into quarters. cut onion, green chilli and garlic and red dried chilli. Heat medium based saucepan and put vegetable oil to oil the pan then drop the knob of butter. to this add onions, green chilli, garlic, rampe leaf, curry leaves, mustard seeds, stir in medium hot oil and butter until onions are tender and thoroughly coated with butter then put the apple cubes in and stir with the curry powder, red chilli powder.
Step 2 - At last put the raw sugar in to caramelize the apple cubes and you should see apple cubes starting to turn brown , keep stiring until mixture is slightly dry (not too dry). Add half cup water for mixture to settle and boil in medium heat.
Step 3- Finally add quarter cup coconut milk and stir well. make sure the curry is not liquidy, should be thick with all spices covered. Remove from heat and let it cool before serving. serve with hot white rice or with indian roti or naan.
Step 4 - This recipe is sure to blow away the minds of little ones because of its sourness and sweetness. This is one of my grand childrens favourite classic curry dishes.
